When you make a dinner that you've frozen, do you thaw and cook it in the microwave (if so, for how long), or what do you do?

Wednesday will not come too fast for me. I've followed doctor's orders and stopped taking the Prozac, and my thoughts are so fast that they overlap each other (but at least they make sense). To add to the fun, the excessive bleeding menopause symptom that hasn't happened for a few months has come back. I'm feeling completely exasperated with my physical reality, but I'm also aware that this too shall pass.

Anyway, I've made some decisions about what to do next. I've almost wrapped up stuff on my job. (The last book is out for review, and I have a few late comments on one book and a few late-breaking hits on a book that I finished.) I've decided to take time off when I'm finished. I keep automatically calling it a leave, but in reality I'm planning "an unpaid leave without guarantee of employment". How's that for bureau-speak? That is, I'm planning to be gainfully unemployed for a few months. I was originally thinking two months, but realistically, no one hires during 4th quarter in even the best economic times. Ideally, what would happen is that I would find a job that would start at the beginning of next year.

I have spaghetti sauce bubbling on the stove. I'll start cooking the spaghetti when the sauce is closer to being done.

I discovered that Kraft macaroni-and-cheese is relatively low-cal if you make it with skim milk and low-fat butter substitute. With spaghetti, a lot of the calories are in the sauce, and I found a way to make a fairly low-cal sauce. WalMart sells both macaroni and spaghetti (and other "family-with-kids food") at extremely low prices. I could save a lot of money by cooking.

The sauce was a little runny (I'm in the process of fixing it for the batch that I'm going to freeze), but otherwise, it tasted quite good. In fact, I had two helpings, thus defeating the purpose of making it low-cal-;)

Don't worry; I ordinarily won't post a running account of the meals that I make-;) I just cook so seldom that it surprises me when it works.
