Sandwiches

Anyone have any favorite sandwich recipes? I'm planning to take sandwiches with me when I drive to Detroit (although I might freeze while eating in the car, but want to save money). I might try making falafel on Sunday and see if that will work. I don't like ham or pork. Any ideas?

King's Hawaiian has a honey-mustard chicken sandwich recipe that sounds fantastic, but it calls for Maui onion-garlic mustard. I can order it, but I doubt that it would get here before I leave. So I'm looking for substitutes. Maui onions are very sweet.

I'm having no luck. Maybe I'll just follow the recipe using garlic mustard instead. Still sounds pretty good.

egg salad or tuna salad sandwiches are my favourite. Lots of mayo, minced onion, dill pickles and some times some shredded cheddar cheese in the tuna.

That sounds good, but I'm looking for something that I could eat in the car without it getting all over the place. I really like chicken salad, but it's messy.

I like turkey or roast beef. For a changeup, especially if I'm carrying sandwiches on a plane, I've made them with bagels - usually poppy seed or the like, then freeze them. I even did that with lettuce in place, and it worked surprisingly well. Freezing it lets it keep easily by just wrapping it in a jacket or some other insulation. The bagel is dense, so a smaller sandwich is more filling and tastes ... denser ... :)
